Chablis....really is just Chardonnay. Well not just! It's Chardonnay from a land made for Chardonnay. Chablis is an area in the northern tip of Burgundy. The most famous soil (they have a few types) is a chalky, rocky substance called Kimmeridgian Clay that gives a mineral quality to the wines. It is actually fossil based as most of Chablis was once under water.The Frederic Gueguen Chablis Premier Cru L'Homme Mort is a vineyard site in the Fourchaume commune. Gueguen himself married into the JM Brocard family, and has been making wines since 2003 with the help of his wife's family. By taking over the Domaine des Chenevieres site after the retiring of the previous owners, Frederic found his dream turning to reality.
The wines are stunning representations of Chablis. With citrus, white flowers, fresh bread on the nose and lime zest, granny smith apples, slate and ripe star fruit rounding out the palate, this bottle was excellent with the Thanksgiving day feast. From the beginning to the end, it paired well with every dish.
